I’m really not a big fan of fish. The fishy (I don’t know any other adjective to best describe it) taste of the fish (that’s redundant!) repulses me.

It could’t be any more basic whenever I cook fish, rub with salt and fry! Since this is the likely fate of the tilapia in the freezer, might as well try a different way of seasoning it. So when the Thai Fried Stuffed Fish recipe I found asked for white fish, I immediately thought of  the tilapia I have in the fridge. Its got white meat after all, right?

If you’ve seen this Thai Fried Stuffed Fish recipe on Chef Logro’s facebook page, you may notice the slight changes in the amount of the ingredients used; I only cook for two, so three white fishes is way too much. Apart from that I also organized how they are listed (for ease). I was not able to contain my OC self from doing so. Believe me, I tried.

The distinct taste of this Thai Fried Stuffed Fish is worth the extra steps (from the usual “salt and fry” kind) to prepare it. Here’s the Thai Fried Stuffed Fish recipe.

  • 1 large tilapia, cleaned, make diagonal cuts at side of fish to infuse flavors
  • oil for deep frying
  • banana leaves for wrapping fish

  • 1/2 tsp turmeric powder
  • salt

Coconut filling:

  • 1 pc bird’s eye chili (siling labuyo)
  • 1 stalk lemon grass, white part only
  • 1/2 tsp turmeric powder
  • 1/2 cup grated coconut
  • 2 pcs cloves garlic, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup tamarind juice
  • salt and pepper to taste
  1. Rub fish with salt and turmeric powder, set aside
  2. Grind chili, lemon grass, turmeric and 1/3 of grated coconut until fine
  3. Add garlic, onion, tamarind juice, salt and pepper and rest of grated coconut
  4. Place coconut filling into opening of fish.
  5. Wrap fish with banana leaf and tie with a piece of thread to prevent filling from bursting
  6. Fry over medium heat until slightly brown
