“Have you tried Adobo?”

When faced with an awkward moment in an elevator with a foreign client of a company I used to work for, that was my conversation piece! Hahaha! Adobo is fastly becoming a signature dish of the Philippines. Anthony Bourdain, Andrew Zimmern, Bobby Chinn have all featured Adobo in their shows. There was even a Filipino indie film shown in the US titled after it.

Adobo have indeed come a long way. Now there are as many variations of this dish as there are islands in the Philippines. The more common recipe (how my aunt cooks Adobo) is the one with soy sauce, so I wanted to try a variation of this beloved Filipino dish. I found this Adobo recipe on Idol sa Kusina.

Ingredients
  • 1 kilo pork belly (cut into small chunks)
  • 1 cup white vinegar
  • 300 grams crushed garlic
  • 10 grams black peppercorn
  • 5 pcs bay leaf
  • 1 tspn salt
  • 3 pcs white onion (minced)
  • 2 cups water
Steps
  1. Mix all ingredients and marinate overnight
  2. Boil for 10 minutes and simmer for 1 hour or until pork is tender
  3. Remove pork belly from sauce and fry (skin down) until golden brown, you can use the oil from the sauce for frying
  4. Toss pork belly into sauce and serve

    I will make a header for you by next week. Yung sexy beach photo mo na rin ang gagamitin ko. Hehe! WordPress kasi gamit ko, kaya add lang ng plug-in for the category/tags, mas madali din mag-customize. Pero sa blogspot meron din yata.     Gooo. Kasi dati pa yun e nagiimport lang sa FB tapos inistop ng FB. E ayoko na gumawa ng bago, effort di ko nmn gsto masyado fancy basta nagsusulat ako. Kaso yun nga sige gawa mo ko dali! (demanding) Teka magkano charge??? hahaha! Saka yung archiving, by year/month, gsto ko sana may category din para mas ma-classify. :(

    Thanks! Ilang oras din ang ginugol ko para maging ganito itsura ng blog na to. Haha! Nakita ko nga yung sa blogspot, medyo limited ang options. Pero feel kong gawan ka ng header, masyado yatang malaki yung current nakakain yung space. Hehe! Yan eh kung okay lang sayo. :D

    IKR! Hahaha! Yup, you can substitute chicken. I do, however, have a different Chicken Adobo recipe that I got from a blog of a culinary school graduate.Will post it soon.
