Steamed Tilapia

Stumbling upon a local TV show (Idol sa Kusina), I decided to try some of the recipes they featured. Understand that I’m no cook and the only skill I have in the kitchen is chopping ingredients (and I’m not particularly adept at that). Wanting to eat healthy (for a change), I decided to give the Steamed Tilapia a try.

STEAMED TILAPIA RECIPE

Ingredients:

  • 1 kg tilapia
  • 1 tbsp. salt
  • 1 tsp. crushed black peppercorn
  • 100 g. ginger julienne
  • 50 g. garlic thinly sliced
  • 100 g. red onion coarsely chopped
  • 30 g. green chili julienne
  • 100 g. tomatoes round slices
  • 50 g. lemon grass chopped (white part only)
  • 1/4 cup calamansi juice
  • 1/4 cup olive oil
  • 24 inches banana leaves

I had no luck finding banana leaves both at the grocery and the market. So, like with my many previous attempts at cooking, I made do with what I have.

Steps:

  1. Season tilapia with salt, peppercorn and calamansi juice.
  2. Fill inside of tilapia with half portion of ginger, garlic, red onion, green chili, tomatoes and lemon grass.
  3. Lay banana leaves on chopping board, drizzle with olive oil.
  4. Place tilapia on banana leaf. Top with remaining half portion of ginger, garlic, red onion, green chili, tomato and lemon grass. Drizzle with olive oil.
  5. Fold banana leaves wrapping the tilapia, then place in steamer for 1 hour or until done.

Despite not having banana leaves (which I’m sure would’ve added and seal more of the flavors in the fish), the Steamed Tilapia still came out very nice. Would definitely try this again, and I’ll make sure I have banana leaves next time.
